Understanding brass, bronze and patina
Brass
Brass is an alloy of yellow butter that has been built thousands of years in the world. Uses brass vary depending on the percentage of zinc and copper and other metals that have been added to the alloy to highlight specific properties, but they include shell casings to the weapons, pipes and components decorative in homes, musical instruments, and household ornaments. The color of the alloy also varies depending on the amount of zinc brass becomes lighter in color with additional zinc, and may reach a stage light yellow.
brass base has about 67% of copper and zinc 33%, making it stronger and more durable than copper, although not as strong as metals like steel. Alloys with zinc even less to start turning reddish, and are sometimes called red brass. Other metals are sometimes added to the alloy with brass lead to more realistic machine and to resist corrosion and iron for brass increasingly easy to forge.

The few months old patina on my carbon steel wok is chipped. What is the best way to solve this problem?
I taken a traditional bamboo wok brush my wok for the first time to take off the lighter portions of the skate to the edge of the pan in the process. Is it because of the slight patina not developed enough, brushing my novice or something I am not included? I also noticed the black patina and developed on the bottom inside, I start to scratch flake.Should everything off season or just on those areas? Why?
A few things can happen here, first are you sure you remove all the machines in the oil before seasoning the wok? Have you had enough oil to the wok and season on a high enough heat? (Most books give instructions very vague or do not insist on the time well for carbon steel season.) Could also be that the wok was not cleaned enough the last time it was used, and what your see is the carbon of the last meal. Use a coarse salt (no soap!) To remove particles if it does not work, put a film of oil in the wok and place in the oven at about 150-175 degrees F. for about 3-5 hours, stirring the oil around every 1 1 / 2 hours or so to generate a new patina in wok. Once used, you only need to clean the wok with hot water and brush your wok. The only time you must generate a new patina is whether the wok has been cleaned with soap or it becomes rusty. For the rest, scrub with a Brillo pad and Generate a new patina. I have 6 different size and style woks and I've never had a problem. I hope this helped you.
