Soba Noodles with Ginger Sauce

1 / 2 cup fat replacer without egg without cholesteral
1 package (8 ounces) soba (buckwheat) noodles or uncooked noodles
1 cup Green Giant frozen peas Sweet (1 pound bag)
3 tablespoons lemon juice
In vegetable oil 1 tablespoon
2 teaspoons finely chopped fresh ginger
1 / 8 c. teaspoon red pepper sauce
1 clove garlic
1 cup shredded spinach leaves

1) Use your favorite cooking spray and a 10-inch nonstick skillet, heat over medium heat. Pour 1 / 4 cup egg substitute, retating the pan to cover bottom of pan. Cook for 1 minute or until egg substitute is fixed. Roll and remove from pan to cool. Continue this process until egg substitute is used up.
2) Cook the noodles according to instructions box. Mix peas for the last 3 minutes of cooking. Drain.
3) Use a large bowl, combine soy sauce, lemon juice, oil, ginger, pepper and garlic and mix well. Shred finely rolled and add to mixture in bowl.
4) Mix noodles, peas and spinach mixture in bowl. Toss gently to coat evenly.

1 tablespoon cider vinegar
1 tablespoon tablespoon honey
2 tablespoons soy sauce
1 / 2 teaspoon ground ginger
1 can (8 ounces pineapple chunks) in juice, drained and juice reserved
3 / 4 pound firm tofu, cut into 1 inch cubes
2 v. teaspoon cornstarch
2 tablespoons of water could
1 tablespoon sesame oil
1 medium onion, chopped (1 / 2 cup)
2 carrots medium, sliced (1 cup)
1 medium green pepper Bell, cut into 1 inch pieces (1 cup)
4 cups cooked rice, hot
Sunflower nuts, optional

1) Mix water, vinegar, honey, soy sauce, ginger and pineapple juice
2) In a small bowl put tofu and pour the juice Mixing
3) Mix gently. Cover. Refrigerate 1 to 2 hours
4) Remove tofu from marinade. reserve marinade.
5) Dissolve constarch in 2 tablespoons water
6) Heat the sesame oil using a wok or 12-inch skillet over medium-high
7) Add the onion and carrots. Sauté about 3 minutes or the vegetables are tender-crisp
Add the pineapple, tofu and peppers; gently sauté 2 minutes.
9) Mix cornstarch and reserved marinade. Add to wok or skillet. Cook 2 minutes additional stirring. Reduce heat and cover. Cook 2 minutes

Serve over rice. Sprinkle with walnuts (optional).
