Ingredients For the stuffing:
10 lamb sausages jerk
4 onions, chopped
4 cloves garlic, finely chopped
2 v. soup. thyme
6 c. soup. shallot
crumbs 1 / 2 cup
4 c. soup. jerk seasoning
2 v. soup. rum
Method:
Sauté garlic and onion until golden brown. Remove from heat and let cool.
Pry of sausages and mince finely in a food processor. (If you can not source locally or online lamb sausage substitute ground lamb mince Jerk finely and add 1 tablespoon Soup Jerk seasoning added.)
Add all other ingredients and mix well. Let stand for Half an hour before stuffing the turkey or chicken.
Sorrel Glaze
Ingredients
236 ml juice of sorrel
4 c. soup. sorrel jam (or chutney)
1 tsp soup. lime juice
Crushed black pepper
Pinch of salt
1 onion, chopped
1 clove garlic and a small piece of ginger, finely chopped
Method:
Sauté onion until that gold .. When slightly frozen add the garlic and ginger. Continue jumping until golden brown. Add the juice of sorrel, jam or chutney, lime juice. Cover and simmer until the liquid has thickened. Season with salt and pepper.
Seasoning for Turkey
1 / 2 or Scotch Bonnet peppers, halved and seeded haberno
5 small green onions
2 v. tea. thyme
1 v. tea. finely chopped garlic
¼ cup light brown sugar
1 tsp soup. dark rum
1 tsp soup. soy sauce
2 v. soup. spicy seasonings (either in powder or paste)
1 tsp soup. cooking oil
½ tsp tea. ground chili powder
1 tsp soup. salt
Freshly ground
Method:
Mix all ingredients together.
Season Turkey in the spice, then rub outside with the spice mixture.
Stuff the turkey and let stand for about 2-3 hours to get the bird absorbs the flavor.
Roast turkey basting regularly with sorrel glaze until cooked through but still firm. Finish with caramelised Glaze Sorrel giving him a speedy dash under the grill turning the bird that you do to avoid burning the glaze.
