How do I keep the pancakes warm while we Chinese border for lunch?
I am the crispy duck. Everything else is sorted, but I always end up with more soggy pancakes (Microwave in a damp cloth) or dry (steamed and put on a plate) to the table. All tried and tested suggestions? How do they do in Chinese restaurants. Thank you.
Microwave and place in a warm moist towel on a plate preheated HOT. Pancakes need to be warm, not wet and almost dry. BTW, the duck is my favorite and I am lucky enough to live near a Chinatown large. $ 15 for a large duck in Beijing.
